This moist and fluffy Apple Yogurt Cake combines fresh grated apples with creamy yogurt, creating a delightful treat perfect for any occasion.

Ingredients

Fruits

  • 2 medium apples (Granny Smith, Honeycrisp, or Fuji) (peeled, cored, and grated)
  • 1 cup plain yogurt (Greek yogurt works too)
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil or melted butter (for extra richness)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Optional toppings

  • Powdered sugar (for dusting, optional)
  • honey or caramel sauce (drizzle, optional)
  • chopped walnuts or pecans (for added crunch, optional)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment.
  • Mix grated apples, yogurt, sugar, oil, eggs, and vanilla until smooth.
  • Combine dry ingredients and gradually add to wet mixture, stirring gently.
  • Pour batter into prepared pan and bake for 45-55 minutes until a toothpick comes out clean.
  • Cool in pan for 10 minutes, then transfer to wire rack. Dust with powdered sugar and add optional toppings.
  • Slice and serve warm or at room temperature. Enjoy!

Notes

For extra flavor, sprinkle chopped nuts on top before baking or after cooling.
