Ingredients

Dry ingredients

  • 1 3/4 cups oat flour (certified gluten-free)
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet ingredients

  • 1/2 cup coconut oil, melted (or butter)
  • 1/2 cup sugar
  • 1/2 cup applesauce (plain, unsweetened)
  • 1 tsp vanilla

Add-ins

  • 1 cup apples, shredded or finely diced (Granny Smith, fuji or gala)
  • 2 tbsp sugar
  • 1/4 tsp cinnamon

Instructions 

  • Preheat oven to 350°F and spray muffin tin.
  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients, then combine with dry. Fold in apples.
  • Fill muffin tins 3/4 full and sprinkle cinnamon sugar topping.
  • Bake for 15-17 minutes until golden and springy.

Notes

For dairy-free, substitute coconut oil for butter.
