These homemade apple cinnamon energy bars are a delicious and nutritious snack, perfect for on-the-go energy boosts.

Ingredients

Dried Fruits

  • 1 cup medjool dates
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/4 cups quick oats
  • 1 1/2 cups Rice Krispies cereal
  • 3/4 cup chopped, dried apples
  • 4 tablespoons flax meal

Instructions 

  • Soak dates in hot water for 10 minutes, then drain.
  • Process dates with peanut butter, honey, vanilla, salt, and cinnamon until finely chopped.
  • Mix oats, Rice Krispies, dried apples, and flax meal in a bowl.
  • Combine the date mixture with the dry ingredients and press into a parchment-lined pan.
  • Chill for 3-4 hours, then cut into bars.

Store in an airtight container in the refrigerator for up to 2 weeks.
