Instructions
Season the chuck roast with 1 teaspoon of salt and black pepper. Sear in olive oil until browned, then set aside.
In the same pot, sauté onions and garlic until fragrant. Add herbs, cinnamon, cloves, tomato paste, and cook briefly.
Deglaze with apple cider, add broth, and return the roast. Cover and simmer for 3 hours until tender.
Add potatoes and carrots, cook until vegetables are tender, about 30 minutes.
Remove the roast, thicken the sauce with flour and butter, then serve sliced with vegetables and sauce.
Notes
For extra flavor, let the roast rest before slicing. Adjust salt and sugar to taste.
