8ozwhite or brown cremini mushrooms(sliced)
2unitsonions(thinly sliced)
2sprigsfresh thyme(or 1 teaspoon dried thyme)
1cuphard apple cider(divided)
1cupchicken stock
Instructions
Heat a large skillet over medium heat, add 1 tablespoon oil, and sear chicken thighs 7 minutes per side until golden. Remove and set aside.
Add remaining oil, cook mushrooms 5 minutes until browned, then add sliced onions and thyme, cooking 3-5 minutes until softened.
Pour 1/2 cup cider, simmer 2-3 minutes to reduce, then add remaining cider and chicken stock. Return chicken to pan, cover, and cook 15 minutes until cooked through.
Remove lid, cook 5 more minutes to thicken sauce. Season with salt and pepper to taste, then serve.
