Delicious and fluffy almond flour pancakes perfect for a healthy breakfast or keto-friendly treat.

Ingredients

Dry ingredients

  • 1 cup blanched almond flour
  • 1 teaspoon baking powder

Wet ingredients

  • 2 large eggs
  • 2 tablespoons maple syrup (sugar-free for keto)
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine sea salt

Additional liquid

  • 1 to 2 tablespoons almond milk or water (as needed to thin batter)

Instructions 

  • Whisk together almond flour, eggs, maple syrup, olive oil, baking powder, vanilla, and salt in a bowl.
  • Thin the batter with 1-2 tablespoons of almond milk or water.
  • Preheat a skillet over medium-low heat and grease with butter or spray oil.
  • Scoop about ¼ cup of batter for each pancake, spread into a small round, and cook until bubbles form and the bottom is sturdy (~3 minutes).
  • Flip and cook the other side for 2-3 minutes until golden. Repeat with remaining batter.
