Instructions
Whisk together almond flour, eggs, maple syrup, olive oil, baking powder, vanilla, and salt in a bowl.
Thin the batter with 1-2 tablespoons of almond milk or water.
Preheat a skillet over medium-low heat and grease with butter or spray oil.
Scoop about ¼ cup of batter for each pancake, spread into a small round, and cook until bubbles form and the bottom is sturdy (~3 minutes).
Flip and cook the other side for 2-3 minutes until golden. Repeat with remaining batter.
