A delicious gluten-free almond cake with a soft texture and a golden top, perfect for any occasion.

Ingredients

Eggs

  • 6 pieces eggs (at room temperature IMPORTANT)
  • 1 tsp salt
  • 250 g icing sugar
  • 150 g unsalted butter (very soft at room temperature)
  • 300 g almond flour
  • 40 g sliced almonds (to garnish)

Instructions 

  • Beat eggs, salt, and icing sugar until light and fluffy.
  • Add softened butter gradually, mixing on low until fully incorporated.
  • Gently fold in almond flour with a spatula, avoiding deflating the batter.
  • Pour batter into a buttered springform pan lined with baking paper.
  • Decorate the top with sliced almonds and bake at 170°C (340°F) for 30-40 minutes until golden and a skewer comes out clean.
  • Allow to cool, then dust with icing sugar before serving.

Notes

Ensure eggs are at room temperature for best volume.
