Instructions
Season chicken breasts with garlic powder, paprika, oregano, thyme, salt, and pepper.
Preheat air fryer to 375°F (190°C). Place chicken in the basket and cook for 10-12 minutes until juices run clear.
While chicken cooks, toss vegetables with olive oil and a pinch of salt and pepper.
After chicken is done, add vegetables to the air fryer and cook for an additional 5 minutes until tender and slightly roasted.
Serve chicken with roasted vegetables, garnished with chopped parsley or cilantro and lemon wedges.
Notes
Use firm vegetables for roasting and ensure chicken breasts are similar in size for even cooking.
