Ingredients

Prepare and measure everything before cooking.

  • 2 large chicken breasts (boneless and skinless) (Cook best when similar in size)
  • 1 piece zucchini (sliced into half-moons) (Use firm vegetables so they roast instead of steaming)
  • 1 red red bell pepper (sliced)
  • 1 yellow yellow bell pepper (sliced)
  • 1 cup broccoli florets (Use firm vegetables so they roast instead of steaming)
  • 0.5 red red onion (sliced)
  • 2 tablespoons olive oil (Enhances flavor while keeping the dish light)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.75 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • to taste Fresh parsley or cilantro (chopped)
  • for serving Lemon wedges

Instructions 

  • Season chicken breasts with garlic powder, paprika, oregano, thyme, salt, and pepper.
  • Preheat air fryer to 375°F (190°C). Place chicken in the basket and cook for 10-12 minutes until juices run clear.
  • While chicken cooks, toss vegetables with olive oil and a pinch of salt and pepper.
  • After chicken is done, add vegetables to the air fryer and cook for an additional 5 minutes until tender and slightly roasted.
  • Serve chicken with roasted vegetables, garnished with chopped parsley or cilantro and lemon wedges.

Notes

Use firm vegetables for roasting and ensure chicken breasts are similar in size for even cooking.
