These easy, chewy vegan coconut cookies are made with just four simple ingredients and are perfect for a quick, healthy treat.
Ingredients

large unsweetened coconut chips or flakes
Almond Flour

finely ground blanched almond flour
Coconut Oil
¼ cup + 2 tablespoons
solid
coconut oil
(solid form)
Maple Syrup
½
cup
pure maple syrup
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Add coconut, almond flour, coconut oil, and maple syrup to a food processor. Blend until thick and sticky with small coconut pieces.
Use a cookie scoop to form balls and place on the baking sheet, spacing evenly.
Bake for 12-16 minutes until golden. Cool on a rack for 30 minutes to 1 hour.
