A quick and flavorful Tex-Mex dish combining seasoned beef, rice, beans, and cheese in just 30 minutes.

Ingredients

Meat and grains

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 1 cup salsa (your favorite brand)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup water
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • to taste Salt and pepper
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, chopped (optional)
  • Sour cream (optional)

Instructions 

  • Cook the ground beef in a skillet until browned; drain excess fat.
  • Add rice, salsa, beans, corn, water, chili powder, cumin, salt, and pepper; stir and bring to a boil.
  • Reduce heat, cover, and simmer for 20-25 minutes until rice is tender.
  • Sprinkle cheese on top, cover, and wait until melted.
  • Garnish with cilantro and serve with sour cream if desired.
