A quick and flavorful pasta salad combining tender chicken, fresh vegetables, and a sweet teriyaki dressing for a satisfying meal in just 30 minutes.

Ingredients

Sauces and Oils

  • 7 tbsp teriyaki sauce (Kikkoman brand recommended)
  • 3 tbsp neutral oil (like Wesson)
  • 1 tsp toasted sesame oil

Vinegars and Dressings

  • 4 tbsp rice vinegar

Pasta and Grains

  • 12 oz bowtie pasta (cooked al dente)

Vegetables and Greens

  • 6 cups baby spinach
  • 8 oz water chestnuts (sliced and drained)
  • 15 oz mandarin oranges (drained well)

Protein

  • 2 cups chicken (shredded or chopped)

Nuts and Dried Fruits

  • 1/2 cup dry roasted peanuts
  • 1/2 cup dried cranberries

Other

  • 3 tbsp sweet onion (finely minced)
  • 1 tbsp toasted sesame seeds
  • salt to taste salt

Instructions 

  • Cook the pasta until al dente, then drain and set aside.
  • In a large bowl, whisk together teriyaki sauce, rice vinegar, and oils.
  • Add cooked pasta, chicken, spinach, water chestnuts, mandarin oranges, onions, peanuts, cranberries, and sesame seeds. Toss to combine.
  • Season with salt and pepper to taste. Serve immediately or chill before serving.

Notes

For extra flavor, marinate the chicken in teriyaki sauce before cooking.
