Ingredients

Protein

  • 2 pieces chicken breast fillets (large)

Dairy

  • 2 balls burrata (about 150 g each)

Produce

  • 14 ounces cherry tomatoes

Pantry

  • 3 tbsp olive oil
  • 1 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1 tbsp honey
  • 2 tbsp balsamic vinegar
  • 4 sprigs fresh thyme

Bread & Nuts

  • toasted pine nuts for serving toasted pine nuts
  • 2 tsp salt (divided)
  • 2 tsp black pepper (divided, more for serving)
  • 1 tsp sweet paprika
  • 1 tsp red pepper flakes (more for serving)

Instructions 

  • Season chicken with 1 tsp salt, 1 tsp black pepper, and paprika.
  • Cook chicken in oil and butter until browned, then remove from skillet.
  • Sauté garlic, deglaze with water, add tomatoes, seasonings, vinegar, honey, and thyme; braise for 10 minutes.
  • Slice chicken, return to skillet, heat through, then add burrata and rest for 3 minutes.
  • Finish with pepper, red pepper flakes, pine nuts; serve with bread and salad.

Notes

Use fresh thyme for best flavor and serve with crusty bread for a complete meal.
