Instructions
Preheat oven to 350ยบ F and line a baking sheet.
Combine banana and shredded coconut in a food processor and pulse until well mixed.
Form the mixture into cookies using a scoop or spoon and place on the baking sheet.
Optional: gently flatten the cookies with your hand.
Bake for 20-22 minutes until golden brown, then cool slightly before serving.
