These simple, healthy cookies require just two ingredients and are perfect for a quick snack or dessert.

  • 1 piece banana
  • 3/4 cup unsweetened shredded coconut
  • 1/2 teaspoon cinnamon (optional)
  • 1 teaspoon vanilla extract
  • a handful mini chocolate chips (optional)

Instructions 

  • Preheat oven to 350ยบ F and line a baking sheet.
  • Combine banana and shredded coconut in a food processor and pulse until well mixed.
  • Form the mixture into cookies using a scoop or spoon and place on the baking sheet.
  • Optional: gently flatten the cookies with your hand.
  • Bake for 20-22 minutes until golden brown, then cool slightly before serving.
