A quick and flavorful bowl combining tender ground beef, nutritious quinoa, and bold Korean-inspired flavors, ready in just 15 minutes.

Ingredients

Grains

  • 1 cup quinoa, dry but rinsed

Oils & Condiments

  • 1 tablespoon olive oil

Spices & Seasonings

  • 1/4 teaspoon fresh ground ginger
  • 3 cloves garlic, minced
  • 1 pound lean ground beef
  • 1/4 cup brown sugar or coconut palm sugar
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon crushed red pepper flakes (or more if spicy)

  • 2 green onions green onions, thinly sliced

Instructions 

  • Cook quinoa in 2 cups water or chicken stock for 15 minutes, then fluff.
  • Heat oil, brown ground beef, then add garlic and ginger, cooking until fragrant.
  • Mix brown sugar, soy sauce, sesame oil, red pepper flakes, salt, and pepper.
  • Add sauce to beef and cook 3-5 minutes to combine flavors.
  • Serve beef over quinoa, topped with sliced green onions.

Notes

For extra spice, add more red pepper flakes or a dash of hot sauce.
