Instructions
Preheat oven to 350ºF (175ºC). Prepare a 9x5 inch loaf pan with nonstick spray and parchment paper.
Whisk together dry ingredients: flour, salt, baking soda, and baking powder.
In a large bowl, whisk yogurt, sugar, and olive oil. Add eggs one at a time, mixing well. Stir in vanilla.
Gently fold in dry ingredients until just combined. Pour batter into prepared pan and smooth the top.
Bake for 55-60 minutes until golden and a tester comes out clean. Cool for 5 minutes, then transfer to a wire rack to cool completely.
