A moist and flavorful pound cake made with Greek yogurt and olive oil, perfect for any occasion.

Ingredients

Dry ingredients

  • 1.5 cups all-purpose flour
  • 0.25 teaspoon salt
  • 1 teaspoon baking powder
  • 0.125 teaspoon baking soda

Wet ingredients

  • 1 cup greek yogurt
  • 0.5 cup extra-virgin olive oil
  • 1.25 cups sugar
  • 3 eggs eggs
  • 0.5 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350ºF (175ºC). Prepare a 9x5 inch loaf pan with nonstick spray and parchment paper.
  • Whisk together dry ingredients: flour, salt, baking soda, and baking powder.
  • In a large bowl, whisk yogurt, sugar, and olive oil. Add eggs one at a time, mixing well. Stir in vanilla.
  • Gently fold in dry ingredients until just combined. Pour batter into prepared pan and smooth the top.
  • Bake for 55-60 minutes until golden and a tester comes out clean. Cool for 5 minutes, then transfer to a wire rack to cool completely.
